Christmas Tortoni

2/3 cup macaroon cookie crumbs(about 12 cookies)
OR
2/3 cup vanilla wafer cookie crumbs (about 12 cookies)
1/2 cup salted blanched almonds, chopped
1/4 cup red candied cherries,chopped
1 quart vanilla ice cream, slightly softened
Red and green candied cherries, if desired
Place paper or foil baking cup in each of 8 medium muffin cups, 2 1/2 × 1 1/4 inches. Mix cookie crumbs, almonds and 1/4 cup candied cherries; fold into ice cream.
Divide ice-cream mixture among muffin cups. Decorate with red and green candied cherries. Freeze about 4 hours or until firm.
HOLIDAY HINTS:
This easy dessert is perfect to make ahead and keep in the freezer to be ready for drop-in guests. A drizzle of chocolate sauce on the dessert plate will make it even more special.
Put your guests in a winter wonderland mood by presenting tortoni on clear glass plates sprinkled with coarse decorating sugar. Use silver, gold or other decorative cupcake liners available in supermarkets and party stores.
