Christmas Spinach Salad


Serving Size: 12

Ginger-Honey Dressing (see below)
12 cups spinach bite-size pieces
2 cups sliced strawberries
2 cups honeydew melon balls
2/3 cup chopped pecans toasted (see Savory Chicken Cheesecake recipe)
2/3 cup Gouda cheese (about 2-ounces) julienne strips
                        OR
2/3 cup  Edam cheese (about 2-ounces) julienne strips

GINGER-HONEY DRESSING:
1/4 cup  lime juice
1/4 cup  honey
2 tablespoons  vegetable oil
1 teaspoon  grated gingerroot
         OR
1/2 teaspoon  ground ginger

Prepare Ginger-Honey Dressing. Toss dressing and remaining ingredients.

GINGER-HONEY DRESSING
Shake all ingredients in tightly covered container.

Variations to this salad:

• Use your favorite greens combo. The variety of salad greens now available in supermarkets is greater than ever before. If you're not fond of spinach, you may like to try a red leaf lettuce or a rosy radicchio.
• If strawberries aren't your choice, try dried cranberries, pomegranate seeds or fresh raspberries.
• Instead of honeydew, try green grapes, apple or pear slices (dipped in lemon juice to keep from browning) or kiwifruit slices.
